Last month, Silo, the UK's first zero waste restaurant opened in Brighton. Housed in an old warehouse in the North Lanes, Silo is a restaurant, bakery and coffee house that adopts a pre-industrial food system that generates zero waste.
We Heart, a blog that explores the intersections between arts and culture, lifestyle, living and travel, asked me if I fancied popping along to Silo for a chat and coffee with their pioneering chef Douglas McMaster. Naturally, I jumped at the chance. Quite frankly we could have nattered to the cows came home. His food is second to none and his passion infectious and inspirational.
